Tag I’m It!...thanks to Mayhews I am supposed to come up with 7 little unknowns about me.
1. I love to Bargain Shop.
Nothing is more exciting to me then getting a $100 jacket for just 5 bucks. My favorite stores are Ross and TJ Max. I spend a lot of time surfing the internet for the deal of a life time. I spend once a week cutting coupons and checking the ads so I can get the best price possible. I have 30 boxes of cereal but only spent 50 cents per box.
2. I love to bake goodies.
I have always had a love for cooking..…however I have developed a love for baking goodies over the last 2 years. I feel the need to bake some kind of treat at least once a week. I try to find any excuse to make a dessert (a party, family home evening, etc…). The down side of this is I am usually the only one who eats most of them.
3. I am a Reality TV Junkie.
I don’t get a chance to watch much TV but if I do you will usually find a reality show on. My favorites are Amazing Race, The Bachelor, What Not To Wear, America’s Next Top Model, Survivor, The Real World…yeah I know, Newport Harbor, A Baby Story, Take Home Chef, the list goes on and on.
4. I guess I can be an obsessive cleaner.
I have a real problem of just being lazy….I feel guilty. I can’t just sit down and relax during the day….So if I have any free time during the day I am usually cleaning the house whether it needs it or not. I used to have an area rug with fringe on the sides. I hated when the fringe wasn’t combed out straight so I would fix it any time that I saw it out of place. My sister-in-law used to come over and mess up the fringe just to see me get down and fix it(how rude ).
5. I love to read.
I love to sit down on the couch in some sweats and curl up with a book and a blanket. I have spent many late, late nights in earnest trying to finish the last of the book I had been reading. I love to get lost in a book. It becomes an obsession until I can finally finish it. Books I have read in the last couple of months: The Twighlight series, Harry Potter 5 & 6, Goose Girl, and Bridge to Terabithia. One of my goals for the future is to write a novel by the time I turn 40. That gives me 12 years.
6. I love to have parties.
I love to have people over and to entertain. I love to cook and bake treats for everyone. But most of all I love card/board games. I love to have friends over so that I can play my favorite games (Ticket to ride, UNO attack, Nerts, Apples to Apples, Scattegories, Balderdash, Phase 10, the list goes on and on). I am also addicted to Guitar Hero…we will usually pull that out too when we have company.

Salsa Recipe
Salsa Recipe--by Alicia Atwater
3-4 (14.5 ounce) cans of stewed/or diced tomatoes.
1/4 onion (I like to use red onion).
1 green bell pepper
1 lime, juiced (or you can use 1Tbsp lime/or lemon juice from concentrate).
1 tsp salt
1 tsp pepper
1 tsp garlic salt (or one fresh garlic clove minced).
2 Tbsp white vinegar
sliced jalepenos from a jar to taste (I use about 10-15 slices...this will be pretty hot). (I also make sure I buy the hot jalepenos in a jar not the tamed ones).
3 Tbsp chopped fresh cilantro (or you can use dried cilantro same amount).
Mix all ingredients into blender or food processor. Blend on low to desired smoothness. Best if you refrigerate for a couple of hours before eating.

Filling
1-5 ounce instant vanilla pudding mix
2 cup. milk
1 sm. container cool whip
4 ounces cream cheese--softened
Mix pudding, milk and cream cheese with an electric mixer at least 2 minutes and until smooth. Fold in cool whip. Refrigerate 2 hours. (For smoothest results--without lumps--mix milk and pudding together, in seperate bowl mix softened cream cheese, then mix the pudding milk mixture with the mixed cream cheese)
Shells:
1 cup water
1/2 cup butter
1 cup sifted flour
1/4 tsp. Salt
4 eggs
Preheat oven to 400 degrees. Heat water, butter and salt in a medium saucepan over medium-high heat to a full rolling boil. Add sifted flour all at once and stir until a dough forms and pulls away from the pan. Remove from heat and transfer dough to a mixing bowl. Allow to cool slightly. Then add eggs 1 at a time mixing until well combined after each addition. Spoon dough into 16 strips on an ungreased cookie sheet (I will grease cookie sheet slightly). Bake for 30-35 minutes. Cool on wire rack.
Satiny Chocolate Glaze (from allrecipes.com)
3/4 cup semisweet chocolate chips
3 Tbsp. butter
1 Tbsp. light corn syrup
1/4 tsp vanilla extract
In a double boiler combine chocolate chips, butter and corn syrup. Stir until chips are melted and mixture is smooth, then add vanilla. (I don't have a double boiler so I just microwave all ingredients in a glass container for about 1 and 1/2 minutes).
Assembly: Fill shells by either cutting tops off of shells and filling with a spoon or making a hole in top or side of shell and fill with a pastry bag. Then dip tops of eclairs into warm chocolate glaze. Refrigerate until chocolate is set (about 30 minutes). Cover and keep refrigerated until ready to serve. (also good out of the freezer).

Congratulations! We love girls but we are actually hoping this one is a boy. I am due June 26 and we find out on Monday if it really is a boy. I kinda have that gut feeling it's a boy-everything is so different, but you never know. Congrats, again!
